As a happy graduate of the Academy of Culinary Nutrition, I wanted to share some information about this course led by Meghan Telpner, as well as my personal experience. I am absolutely over the moon with this program, and am so glad I stumbled across it. If you want to learn more about nutrition but have a full time job and can’t apply for a course that asks you to attend classes in person, this may just be the ideal course for you. It was for me. 🙂
At first I was a bit skeptical about enrolling in an online program that was organized in Canada with me living all the way in Barcelona, but I was so pleasantly surprised to see how responsive and supportive the faculty and staff were. The distance & time difference were never an issue at any point throughout the course. On to the specifics! So this course is about nutrition, healthy living and healing. It’s largely plant-based ( all the recipes you have to do have a vegan option ), and gluten-free. In the 9 modules that are released throughout a period of 3 months, you learn how to create a healing diet for yourself, your loved ones, and for future clients. Meghan teaches you how to organize your kitchen, how to plan and execute a weekly meal plan, how to create a healing diet for a specific condition ( for my assignments I picked type 2 diabetes ), and how to organize a workshop. The following modules are covered: culinary nutrition basics, fundamentals of nutrition, “plantiful” eating, fueling with whole foods, raw food foundations, liquid nutrition ( all about juices & smoothies ), healing elixirs and tonics, therapeutic foods, beauty and home cleaning products, and baking and sweet treats ( my favorite! ).
Even though I’ve been cooking and baking vegan food for a few years now, I can’t say that I’ve been paying much attention to healthy eating or what it really means to fuel your body with nourishing, gluten-free foods. Throughout the course of this program I learned a ton of new things, but I also got better at things that I was already familiar with.The absolute highlights for me were the raw food, elixirs and tonics modules. I was also very happy to see just how easy it is to make your own cleaning & beauty products. Fabulous stuff! The course really pushed me to be better at the things that I was already good at, and to discover new tricks that I can apply in my everyday cooking and baking. The Academy of Culinary Nutrition has reconfirmed my passion for food…I really couldn’t be happier with this experience.
