Baked Doughnuts with Beetroot Icing

I LOVE LOVE LOVE this doughnut recipe ( also great for making cupcakes or even birthday cakes ). These baked doughnuts with beetroot icing are the perfect treat for anyone with a sweet tooth. 🙂 I used vegan cream cheese and beetroot powder for the icing, and in the spirit of keeping baking as healthy as possible, I substituted vegan butter for coconut butter.                                                                    Baked Doughnuts with Beetroot Icing Here’s how you whip up this yummy dessert:

Ingredients
  1. 250g all purpose flour
  2. 150g sugar
  3. 150g coconut butter
  4. ½ tsp vanilla powder
  5. ½ tsp nutmeg
  6. ½ tsp cinnamon
  7. Zest from one lemon
  8. Pinch salt
  9. 1 tsp baking soda
  10. 1 tbsp apple cider vinagre
  11. 6 tbsp aquafaba
  12. 200 ml nut milk
For the icing
  1. 200g icing sugar
  2. 200g cream cheese
  3. 1 tbsp beetroot powder
  4. dark chocolate chips to decorate
Instructions
  1. Preheat the oven to 180C.
  2. Mix all the dry ingredients together in a bowl. In a separate bowl, combine the milk, aquafaba, and vinegar.
  3. Add the wet ingredients, to the dry mixture, and stir until well combined, and a batter forms.
  4. Pour the batter in a doughnut tray, and bake for 17 – 20 minutes.
  5. When ready, set aside to cool. In the meantime, mix all the incredients for the icing together.
  6. Once the doughnuts have cooled, top them off with icing, and chocolate chips.
