What’s invisible and smells like carrots? Bunny farts!!
No worries, this post isn’t about bunny farts! 😀 But it does have to do with carrots, carrot soup to me more specific. I’m absolutely in love with this recipe. It’s so simple, yet so delicious. It’s one of the easiest meals to make if you ask me. The only problem right now is the heat, but if you don’t mind eating hot food this time of year, do try it. It’s simply heavenly. ❤
This carrot soup is ideal for those evenings when you want to curl up on the couch with some heartwarming food. I really hope you enjoy it! 🙂
- 5-7 carrots
- 2 potatoes
- 800 ml veg stock
- 200 ml coconut milk
- 1 onion
- salt & pepper
- Cut the carrots, potatoes, dill and onion into small pieces, and leave to cook in the veg stock until the carrots are cooked through ( about 20 minutes ).
- Add the coconut milk, and season to taste with salt and pepper. Leave on the stove on low heat for a further 5 minutes.
- Remove from the stove. With a hand blender, blend until creamy smooth.
