Cherry Chocolate Cake

I’m just MAD about all things chocolate, and maybe Willy Wonka’s ginormous chocolate fountains have something to do with it, but come on! How could you not love the cocoa bean, and all the magical stuff you can make with it? Especially chocolate! It comes in so many different shapes, sizes, and flavours, even the most picky of eaters can’t resist it. 🙂Cherry Chocolate CakeThis cherry chocolate cake is one of my all-time favourite desserts, I just love the contrast between the gooey cherries and the spongy cake ( and before you ask, of course it’s vegan )!

Ingredients
  1. 150g cocoa powder
  2. 250g all-purpose flour
  3. 125g brown sugar
  4. 1 egg replacer
  5. 150g cherries
  6. 150g vegan butter
  7. 1 tsp baking soda
  8. 1 tsp baking powder
  9. 60ml plant-based milk
Instructions
  1. Preheat the over to 200C.
  2. In a bowl, mix the flour, melted butter, cocoa powder, sugar, baking soda and baking powder.
  3. Mix the egg replacer powder with the water, as instructed on the package of the product you use, and add to the rest of the ingredients. Mix well. If you see the mixture too dry, add more milk.
  4. Cut the cherries in half, remove the bone, and fold into the mixture.
  5. You can use the batter to make a cake, or pour it into muffin moulds.
  6. Stick it in the oven for 25 minutes or until cooked in the centre.

      Baking soda is sodium bicarbonate, and baking powder is a mixture of baking soda and starch. They are both leavening agents. If you add too much baking powder, your batter can end up tasting bitter, especially if you use ingredients like cocoa powder. For this recipe, I used both – the baking powder helps the cake to rise, while the baking soda neutralizes the acid. I hope this helps clarify things a bit. 🙂
