I’m in a chocolate state of mind, so today I´m sharing another one of my favourite chocolate desserts: chocolate chia pudding with fresh berries. Sounds pretty good, don’t you think? That´s because it is! And the best part, you don’t have to do much. Just add a few ingredients in a jar, stir, and let the fridge do all the work for you! I know not everyone likes chai seeds. A friend of mine said she hated the squidgy texture because it made her feel like she was eating tadpoles. Not sure about that, but it’s true they are a bit odd the first time you try them. I personally can never get enough. They’re great if you want to boost your energy the healthy way. You can add them to water with a bit of lemon, to smoothies, in desserts…the other day I even made plum jam with chia seeds. Loved it! And chia pudding toped off with granola or fresh fruits? Mind-blowing! Try it and see for yourself. 🙂
- 35g chia seeds
- 250ml plant-based milk ( I like to use almond, or hemp )
- 1 tbsp coconut sugar
- 1 tbsp raw cocoa powder
- Mix all the ingredients together in a jar, and leave to set for 3, 4 hours in the fridge. I like to leave it overnight, and have it for breakfast the next morning.
- Top off with berries, and coconut shavings.
