Chocolate Glazed Baked Doughnuts

Time to talk baked goods ( yes, again! ). These yummy, yummy doughnuts are made with fresh raspberries, cranberry powder, and are glazed with scrumptious raw Conscious Chocolate bars. In truth, these little guys were meant to be cupcakes, but it’s been a while since my last batch of homemade doughnuts, so there you have it! 🙂 You can use this batter to make a cake too if you wish, just be aware that you will need to leave it in the oven for longer.                                                         Baked Doughnuts with Chocolate GlazeThis recipe is pretty straight forward, here’s how it’s done:

Ingredients
  1. 335g all-purpose flour
  2. 200g sugar
  3. 60g coconut butter
  4. 1 tsp baking powder
  5. 1 tsp baking soda
  6. 1 tbsp cranberry powder
  7. 1 tsp cinnamon powder
  8. 1 tsp vanilla powder
  9. 200 ml nut milk
  10. 3 tbsp aquafaba
  11. 125g fresh raspberries
  12. 100g dark chocolate for the glaze
Instructions
  1. Preheat the oven to 180C.
  2. Combine the dry ingredients in a bowl. Mix in the nut milk and the aquafaba.
  3. Carefully fold in the raspberries, pour the batter into a doughnut pan, and bake for 25 – 30 minutes. Melt the chocolate over a bain marie. When the doughnuts have cooled, dunk them in the chocolate.
