Easy Peasy Rocket Salad

When it comes to salads, there’s a fine line between boring and bursting with flavour. Sometimes all it takes to turn a simple salad into a great dish, is an exciting dressing. easy peasy saladNowadays I dread asking for salads when I eat out. More than often they come back with a bowl of lettuce and some tomatoes…and while I love bunny food, when they charge you an arm and a leg for it just because they give it a fancy name, that’s definitely a slap in the face. So I prefer to make my salads at home! 🙂easy peasy saladThis here is a rocket salad, with plenty of yummy organic veggies, and then topped off with a tahini nutritional yeast dressing. It takes a second to whip up, and you’ll only be using ingredients that are both cheap and easy to come by. You’re probably wondering why this salad is awesome. It’s all in the dressing! I love the combination of tahini, tamari and nutritional yeast. If you haven’t tried this combo before, you simply must. Today if possible! 😀

Ingredients
  1. 150g rocket salad
  2. 2 tomatoes
  3. 1 cucumber
  4. 1 apple
  5. 150g smoked tofu
  6. pumpkin seeds
  7. sunflower seeds
For the dressing
  1. 30g nutritional yeast ( or more if you like it cheesy )
  2. 1 tbsp olive oil
  3. 1 tbsp tamari sauce
  4. 1/2 tbsp rice syrup
  5. 1 tbsp tahini paste
  6. 50 ml water
  7. fresh thyme
Instructions
  1. Cut the tomatoes, the cucumber, the apple and the tofu into small pieces. Mix well together in a salad bowl.
  2. In a jar, add all the dressing ingredients, and shake until well combined.
  3. Top off your salad with seeds and dressing.
