Even though it’s not really hot soup season anymore, I like to think it’s never too hot for lentil soup! Comfort food is called comfort food for a reason, and this dish in particular is my go-to recipe whenever I fancy something tasty, heartwarming, cheap, and easy to make.
This soup is fantabulous on its own, but it’s EVEN better served with a bread roll and the latest episode of Game of Thrones. 😀
- 1 onion
- 800 ml vegetable stock
- 200g lentils (cooked)
- 3 celery sticks
- 2 carrots
- 1 tomato
- salt and pepper
- Cut the onion, carrots, and celery sticks into small pieces.
- Put all the ingredients together in a pot, and leave to cook on medium heat for 25 minutes, or until you see that all the veggies are cooked through.
- With a hand blender, mush it all into soup.
- Serve with a bread roll.
