Rocket Salad with Beets and Blood Orange

I rarely post salads on the blog, and I guess that’s because I hardly eat them…GUILTY! 😀 I keep thinking that there are so many other yummy vegan things to make & try, so I turn to salads as a last resort when I lack the time to prepare anything else. That’s not to say you can’t make flavourful, complex, mouthwatering salads. This rocket salad with beets and blood orange slices is actually among my favourite ones, and it’s most definitely a recipe I come back to again and again.                                          Rocket Salad with Beets and Blood OrangeFor this salad you’ll need rocket leaves, blood oranges, beets, tomatoes, modena vinegar, maple syrup, walnuts and seeds, radishes, and some pumpkin seed oil.                                        Rocket Salad with Beets and Blood Orange

Here’s how you make it:

For the salad
  1. 150g rocket leaves
  2. 2 blood oranges
  3. 2 small cooked beets
  4. 100g walnuts
  5. 150g radishes
  6. 2 tomatoes
  7. 50g pumpkin seeds
For the dressing
  1. juice from one blood orange
  2. 2 tbsp modena vinegar
  3. 2 tbsp pumpkin seed oil
  4. 1 tbsp maple syrup
  5. Salt & pepper to taste
Instructions
  1. Cut the tomatoes, radishes, beets, and blood oranges.
  2. Mix all the salad ingredients together in a bowl.
  3. Put all the ingredients for the dressing in a jar, and shake well.
  4. Pour the dressing generously over the salad, and mix the salad again to coat all the leaves and toppings evenly.
