Spiced Cake with Coconut Almond Buttercream Frosting

I love the month of December! There’s no snow in Barcelona, but that wont stop me from feeling festive because the countdown to Christmas has started! πŸŽ„β˜ƒβ„οΈspiced cake with coconut almond buttercream frostingI’ve been trying some Christmasy hot drinks & desserts – gingerbread cookies, vegan “eggnog”, and just the other day I made this spiced cake with coconut almond buttercream frosting. Cake
  1. 125g millet flour
  2. 125g buckwheat flour
  3. 1 tsp baking soda
  4. 150g raw cane sugar
  5. 1 tsp cinnamon
  6. 1/2 tsp nutmeg
  7. 150g coconut butter
  8. Zest from one lemon
  9. Pinch salt
  10. 1 tbsp apple cider vinagre
  11. 6 tbsp chickpea liquid ( equivalent of 2 eggs )
  12. 200 ml almond milk
Buttercream frosting
  1. 200g vegan butter
  2. 250g powdered sugar/ icing sugar
  3. 50g coconut butter
  4. 50g coconut bits
  5. 50ml coconut milk
  6. 1 tbsp almond butter
  7. Pecans or other nuts for topping
Instructions
  1. Preheat the oven to 180C.
  2. Mix all the dry cake ingredients in a food processor.
  3. In a separate bowl, mix all the wet ingredients, and add to the dry ingredients. Mix well.
  4. Pour the cake batter in a 18cm round cake tin, and bake in the oven for 45-50 minutes.
  5. Take out of the oven and let it cool.
  6. In a food processor, mix all the buttercream ingredients together until creamy.
  7. Put the frosting on the cake once it has cooled completely ( I cut the cake down the middle and added another layer of frosting at the center ), and top off with pecan nuts.

  1. What exactly is chickpea liquid? And can I substitute vegan butter for coconut butter? And coconut sugar for raw cane sugar? Sorry, I just can’t get some of these things unless I order them online…and I’m hungry for cake today!!! πŸ™‚

    • Hi Laura! Chickpea liquid is the liquid that comes with chickpeas when you buy them cooked in a jar. πŸ™‚ You can also use chia gel ( it’s 1 tbsp chia seeds and 3 tbsp water per egg ). Yes, you can use vegan butter, and you can use coconut sugar. I hope this helps, and thanks so much for stopping by! xx
