Tomato and Basil Bruschetta

The other day I found some lovely fresh organic basil at the market, and sure enough my mind jumped to Bruschetta – delicious toasted bread with tomatoes, basil, olive oil, garlic, and black olives ( salivating yet? 😀 ).

Bruschetta is an antipasto, a typical Italian starter made with fresh, simple ingredients. There are some meaty variations out there, but the classic tomato & basil combo is almost always vegan.

Ingredients
  1. 2 tomatoes
  2. 1 handful fresh basil
  3. 1 – 2 garlic cloves
  4. a few black olives
  5. salt and olive oil
Instructions
  1. Put all the ingredients in a food processor, and pulse a couple of times. Season with salt to taste.
  2. Put the tomato mixture on top of some toasted bread, and sprinkle with olive oil.
